Mediterranean Almond Couscous Salad
olive oil couscous, tomatoes, cucumber, Feta cheese, Ranch sliced almonds.
Preparation Time: 15 minutes
- 1 (5.8-oz.) box roasted garlic and olive oil couscous or similar, prepare according to package directions; cool completely
- 1 cup each: diced tomato and diced hothouse cucumber
- 4 oz. crumbled Feta cheese
- 2 Tbsp. capers, drained
- 2/3 cup buttermilk ranch dressing
- 1/2 cup Almond Accents® Ranch Style sliced almonds
In large bowl, combine all ingredients; mix well. Serve immediately or cover and refrigerate until ready to serve.
Makes 4 to 6 servings.
